Lately, I've fallen into the trap of buying an energy bar almost every day I work. I'm picky about my energy bars and so this has become a rather expensive habit. I want to make sure that they don't have too much sugar, that the carbs are balanced with a decent amount of protein and fat, and that the ingredients are real food. Another kind of odd criteria is that I want my protein bars to have at least 250 calories. You see, I'm a nurse and nurses are often work very hard for 12 hours with minimal time for breaks. I need something that's going to last and, on a bad day, that can replace a meal. So, in the interest of my health and sanity, I will totally shell out $3-4 for my favorite GoMacro bar or 22 Days bar. (I do really love their bars.)
But my wallet thinks I can do better.
These energy balls are a perfect snack for a busy day. They are delicious, nutrient-dense, and the perfect for satisfying both small and large appetites. If I'm just a little hungry, I'll have one to tide me over until my next meal. If I'm having a hunger emergency with not respite in sight, I'll have 3 or 4. It's the perfect choose your own adventure snack!
I recommend using a stand mixer for this if you have one. Otherwise, you'll get a great upper body workout from stirring!
On-The-Go Energy Balls (with Collagen Protein!)
- 1 cup nut butter (I used Wild Friends Honey Sunflower Butter)
- 1/4 cup honey
- 2 cups rolled oats
- 1/4 cup dried goji berries
- 1/4 cup dried cranberries
- 1/3 cup collagen protein
- 1 cup unsweetened shredded coconut
- 1/2 cup ground flaxseeds
- 2-3 Tbsp water
Add all ingredients except water to you stand mixer bowl. Stir on medium speed using a paddle attachment, adding water 1 Tbsp at a time until everything is well mixed together. The dough should be quite stiff
Measure about a Tbsp of dough and roll between your hands until you have a ball-shape. Continue with remaining dough.
Store at room temp for several days or in the fridge for over a week.
