I have been lucky enough this year to have a subscription to Bon Appetit Magazine. Each new month delivers a new set of inspirations for cooking delicious, seasonal, and surprisingly easy meals. (No, they're not paying me for this!) Since today is my last day of peace before I get hit with a deluge of work and travel, I decided to cook up some tasty and portable Millet-Scallion pancakes. I followed the recipe exactly except I substituted coconut oil for vegetable oil in the frying pan. I figure there's no point in adding unnecessary Omega-6 fats to my meal when medium-chain triglycerides (MCTs) would do the trick just as well.
